Banana bread is the reason there are bananas.
It’s true.
This loaf was a day late in the making but worth the wait. Three bananas were on their way to the trash (that sounds like the beginning of a bad joke–three bananas walk into a bar . . .). Anyway, the bananas needed another day to sweeten up.
I almost didn’t make the loaf at all because it’s just my wife and I in the house and the two of us have a hard time finishing off an entire loaf. We usually set aside a few slices for ourselves and take the rest over to friends and neighbors.
