Cornbread Casserole

Cornbread casserole is another comfort food favorite of mine. It’s also another dish that my wife will not eat. Something about the tomatoes.

1 lb. ground beef
1/2 small onion, diced
2 Tbsp red bell pepper, diced
1 can diced tomatoes
1 small can of corn
1 can of Ortega Diced Green Chiles
1/2 tsp garlic powder
1 box Jiffy Cornbread Mix
1 egg
1/3 cup milk


Bottom Layer:
Saute onion and red bell pepper, set aside.
Cook ground beef in large frying pan over medium heat until done.
Add sauteed onion and red bell pepper.
Add tomatoes, corn, chili peppers, and garlic powder.
Stir well, bring to a boil, and carefully pour into a casserole dish.

Top Layer:
Put cornbread mix in bowl.
Add egg and milk.
Stir until mixed (some lumps are okay).
Spoon on top of first layer and spread evenly.

Bake at 400°F for 15-20 minutes.
