Pan Fried Chilean Sea Bass

I’ve never been very successful at baking, broiling, or grilling fish, but I can pan fry just about anything to my liking. Short order, greasy spoon stuff. That’s what I did here. It’s tender. It’s juicy. It’s flavorful. What it isn’t, is a sexy presentation. But I’m not too interested in that kind of food photography.

There is strong evidence that eating fish is good for the heart and blood vessels. I’ve been wanting to get more seafood into my diet but it’s been slow going. It’s expensive; my wife doesn’t eat it; and I’d like to get away from pan fried food. I shouldn’t use those excuses, though. True, I can’t do a thing about the price, but my wife and I could each have different food at our meals, and I could learn (probably) how to prepare fish in other ways besides a frying pan. I’m hopeful.
