Baked Chicken Thighs

My doctor has been telling me lately that I’ve got to cut back on the fried foods and start using my oven more often. My tasty chicken world may be in for some adjustments.

I love bone-in skin-on fried chicken thighs. When ever I cook chicken I’m always reminded of a time back in the late 1970’s when I was dating a girl who’s grandfather fried the best chicken I’d ever had. Brad Bradshaw was his name. One day I asked Mr. Bradshaw how he made such juicy, delicious fried chicken, and that led to me spending a few Sunday afternoons sitting at his kitchen table while he fried chicken and schooled me. I’ve been making mine the same way every since, for over 50 years now – although the chicken thighs shown here were baked – not fried. My doctor would be pleased.
